Lettuce Wraps



3 Tbs. canola oil
2 tsp. minced garlic
1tsp mined ginger
1 Pound Chicken Breast, grounded*
1 8oz can Water Chestnuts, finely chopped
½ c Mushrooms, finely chopped
3 green Onion, chopped
2 cups bagged coleslaw mix or shredded cabbage
4tbs. Soy Sauce
4 tbs. Brown Sugar
1 tsp. Rice vinegar
1-2 Heads of butter lettuce


Heat the oil in a in a large skillet on medium high heat on the stove.  Add garlic and ginger sauté for about a minute.  Add in the chicken, mushrooms, water chestnuts, soy sauce, brown sugar, and rice wine vinegar.  Cook until the chicken is cooked through.  Add in green onion and coleslaw mix. Cook for another 3-5 minutes or until the cabbage is cooked. 
*A easy way to ground chicken is to blend it in the blender

Special Sauce
½ c sugar
1 cup warm water
4 tsb. Soy sauce
4 tbs. Rice wine vinegar
4 tbs. Ketchup
2 tbs. Lemon juice
¼ tsp sesame oil
Optional add in’s: Chinese Mustard and
 Sriracha sauce
 Whisk all the ingredients in a bowl

To serve remove the individual leaves form the lettuce.  Spoon the chicken mixture on to the leave and the then drizzle the special sauce over the top.  Serve 6-8

I like to serve with a rice pilaf and some fresh fruit.
