Easy Pie Crust



I love when November finally arrives every year, because it’s pie month.  I used to hate making pies until my friend shared with me her pie crust recipe; now it’s one of my favorite things to make. Thanks Friend.  I think that pie is one of my most favorite desserts.  I think it’s because when I eat pie, I think of home, my mom and family.
 When I was little we lived close to my grandma and most of my mom’s brothers and sisters.  At Thanksgiving time my mom, grandma and aunts would get together the day before Thanksgiving and make 30 to 40 pies.  I loved walking into my grandma’s house on Thanksgiving afternoon and seeing all the pies lined up on the counter.  There is just something about a warm flaky crust, with your favorite pie filling topped with a scoop of vanilla ice cream that is slightly melted.  That perfect bite of the warm and the cold with the flaky crust. YUM!!

Pie Crust

2 cups flour
1 cup butter flavored shortening
1 teaspoon salt
½ cup milk, cold
1 ½ teaspoons vinegar

Mix milk and vinegar together and set aside for at least 5 minutes.  For this recipe you can use a hand mixer or a standing mixer.  In a mixing bowl or mixer combine shortening, flour and salt, mix until the mixture looks crumbly.  Add in the milk mixture (it will be curdled).  Mix until the dough comes together.
Divide in half and roll out thin
Use the pie filling recipe of your choice

This makes 2 single crusts or a double crust pie.




Don’t know what to do with left over pie crust? 
 Make pie dough cookies


Roll out your dough in a rectangle.  Place on a cookie sheet, sprinkle with cinnamon sugar. Cut with a knife or pizza cutter into pieces but no bigger than 2’’ squares.

Bake at 450 for 10-15 min until the edges are lightly brown.
