French Dip Sandwiches

2.5-3 pond Beef Roast
Salt and pepper
1 tsp. garlic powder or granulated
2   1 ounce packages dry onion soup mix
1 tbs. worcestershire sauce
2 cans beef broth
1 cup Water
6-8 large buns or 12 rolls (I prefer rolls)
Optional topping: Provolone cheese, swiss cheese or my favorite grilled sweet onions

Place roast in a crock pot.  Pour water, beef broth and Worcestershire sauce over the roast.  Sprinkle salt, pepper, garlic and onion soup mix over the roast.  Cook on low 8-10 hour, or 4-6 hours on high until meat is easy to shred.

When roast is done, split your rolls in half and butter both sides of the bread and broil it until toasted. If you are serving with cheese you will want to top your buns with roast and then cheese and broil until cheese is melted. And top with onions if you like.

Ladle juice into small cups for dipping.

Meatloaf

So here’s the deal, I hate meatloaf but my husband loves it. He asked me to make meatloaf so that he could have a meatloaf sandwich.  After reading many recipes and reviews, here is a recipe that I came up with for meatloaf.  I was pleasantly surprised and I loved this recipe.  I can actually say that I like meatloaf.

Meatloaf

2 pounds ground beef
1 onion, chopped or 1 Tbls. dry onion
1 tsp. minced garlic
1 Tbls. oil
2 eggs
2 Tbls. Worcestershire sauce
1 cup oats
1 tsp. salt
½ tsp. pepper

Sauce
1 Tbls. brown sugar
1 tsp. prepared mustard
1/2 cup ketchup
¼ tsp. garlic salt
1 tsp Worcestershire sauce

Sauté onion and garlic with the oil (if using dried onions skip this step). In a bowl combine all the meatloaf ingredients. I like to mix my meatloaf in my KitchenAid.  Press meatloaf mixture into a greased loaf pan. Bake at 350 for 1 hr and 15 min.  Mix the sauce ingredients together and spread evenly on top of the meat loaf the last 10 minutes of the baking time. Let rest 10 minutes before serving.  Serves 6-8

I always make two loaves so that my husband can have a meat loaf sandwich the next day.

Food for thought: For the past couple of weeks I have been focusing on asking the Lord to help ease my burden.  I had a lot on my plate and I wanted help to deal with the stress that comes with being pulled in so many directions.

Every morning I have been praying to the Lord to help my burdens to be lighter.  Which the Lord did, I have had very little stress with all that I had going and was able to clearly think through everything that I needed to do.  However I was not prepared to have all my burdens eased, even burdens that I didn't realize that I had been carrying.

Twenty plus years ago someone I loved really hurt me emotionally.  I thought that I was over this experience, I held no grudges towards this person and I now have a great relationship with this person. So it shocked me when my husband pointed out that I truly had not dealt with the emotions and the scars that were left from this experience.  I spent 24 hours crying and confronting the scars that were still in my heart. But when I asked the Lord once again to ease the burden of the pain and hurt that I felt it was gone in an instant.  Not until the burden had been lifted from my heart, did I realized how heavy laden I was because of the hurt I had been carrying. Richard G Scott said, “Complete healing will come through your faith in Jesus Christ and His power and capacity, through His Atonement, to heal the scars of that which is unjust and undeserved. You may find that hard to believe with your current feelings. I have witnessed how the Savior has healed aggravated cases of abuse in that way. Ponder the power of the Atonement.  Pray to understand how it can heal you.”

I testify to you that if you will humbly go to the Lord and ask for your burdens to be eased he will ease them, even the burdens you didn't realize you had.

Grandma Little's Shredded Pork

3-6 pound pork roast

Cook the Pork roast in a crock pot with 2 cups of water on low6-8 hours, or until it falls apart. Shred meat, place is a greased 9x13 pan (if you don’t grease your pan you will be sorry when its time to do the dishes).  Pour over sauce. Then broil stirring frequently until its browned to your likeness.  You can serve this by its self or as a sandwich.

Sauce:
½ c margarine or butter
1 cup brown sugar
1 1/3 cup ketchup
1 Tbs.  yellow mustard
½ cup white vinegar
2/3 cup water
4 Tbs. soy sauce
4 Tbs. Worcestershire sauce
1-2 tsp salt
¼ tsp ground pepper

Melt butter in a sauce pan.  Add in the sugar, ketchup and mustard stir well.  Add in the rest of the ingredients. Bring to a boil and simmer 5 minutes.

Food for Thought:

We cannot truly love God if we do not love our fellow travelers on this mortal journey. Likewise, we cannot fully love our fellowmen if we do not love God, the Father of us all. The Apostle John tells us, “This commandment have we from him, That he who loveth God love his brother also.”3 We are all spirit children of our Heavenly Father and, as such, are brothers and sisters. As we keep this truth in mind, loving all of God’s children will become easier.-President Monson

Food For Thought: A woman’s moral influence is nowhere more powerfully felt or more beneficially employed than in the home. There is no better setting for rearing the rising generation than the traditional family.
In all events, a mother can exert an influence unequaled by any other person in any other relationship. By the power of her example and teaching, her sons learn to respect womanhood and to incorporate discipline and high moral standards in their own lives. Her daughters learn to cultivate their own virtue and to stand up for what is right, again and again, however unpopular. A mother’s love and high expectations lead her children to act responsibly without excuses, to be serious about education and personal development, and to make ongoing contributions to the well-being of all around them.-Todd D.
