Meat
2 pounds ground beef
1 envelope Taco Seasoning
1 envelope of onion soup mix
Hard or soft corn tortilla
Brown the meat then drain and rinse. Add in the seasonings and ¾ c water and
simmer 10 min.
For Soft Corn Tortilla: Place one tsp of oil in a pan on
medium high heat place in tortilla and rub tortilla around in the oil. Cook the tortilla until it starts to have
little bubbles, this is only like 20 seconds then flip and rub in left over oil
cook until bubbles appear then in a tortilla warmer or in between napkins. If I
am making a lot I will cook the tortillas on my griddle at 350.
Black Bean Salsa
1 can Black Beans, Drained and rinsed
1 can Corn or 1 ½ cup frozen corn
1 Tomato, diced
½ c chopped Purple or Sweet Onion
1 Avacodo, finely cut
2 Tbls. Chopped cilantro
½ tsp. salt.
2 Tbls. Lime juice
1 Tbls. Olive oil
Mix all the ingredients together. Let sit 1hour. Is great with Corn chips
To assemble: Tortilla, meat, shredded cheese, black bean
salsa, and then sour cream if you like.
